One of our talented foster children recently treated us to a taste of Afghanistan with this homemade Bolani – a delicious stuffed flatbread popular in Afghan cuisine! It was not only a culinary delight but a meaningful way to celebrate cultural heritage and explore the joy of cooking together. ### 🌿 Afghani Bolani Recipe 🌿 Bolani is a savory, crispy flatbread traditionally stuffed with spiced potatoes, greens, or leeks. Perfect for sharing, these make a wonderful snack or meal! Ingredients: – 2 cups all-purpose flour – 1/2 cup water – 2-3 medium potatoes, boiled and mashed – 1/2 cup green onions, finely chopped – Fresh cilantro, finely chopped – Salt, black pepper, and red chili flakes to taste – Olive oil for frying Instructions: 1. Prepare the Dough: Mix flour and water to form a soft dough. Cover and set aside for 20-30 minutes. 2. Make the Filling: Combine mashed potatoes, green onions, cilantro, salt, and spices in a bowl. 3. Assemble Bolani: Divide dough into balls, roll each out, and add a spoonful of filling.
